Peach Caprese Salad

A light and refreshing summer salad made from peaches, tomatoes, fresh mozzarella, and basil. Serve on its own, as a side dish, or an appetizer. Ready in under 15 minutes!

Ingredients

  • 1 large peach sliced
  • 1 large tomato sliced
  • 5 slices fresh mozzarella
  • 5 leaves fresh basil
  • salt and pepper to taste
  • 1 tablespoon balsamic glaze or syrup see note

Instructions

  • Stack or layer peach, tomato, mozzarella, and basil. Sprinkle with salt and pepper and drizzle with balsamic syrup. Serve immediately.

Notes

You can purchase balsamic glaze or you can make it. To make it, simmer ⅓ cup balsamic vinegar in a small saucepan over medium heat for 10-15 minutes, until thickened, reduced and syrupy. Allow to cool slightly.
