Berries and Cream
It doesn't get much easier than this no-cook Berries and Cream dessert. This two-ingredient recipe comes together fast and will satisfy your sweet tooth immediately.
- 3/4 cup vanilla ice cream adjust quantities to suit your taste
- generous 1/2 cup frozen mixed berries adjust quantities to suit your taste
Thaw the berries just a bit. I do this by placing them in a mug and microwaving them for about 15 seconds. They should still be partially frozen, but juicy and easy to mash.Add the ice cream and stir and mash until the berry juices are running through the ice cream and any large chunks of berries are broken up. Eat immediately.
- You can also add frozen sweet cherries along with the berries.
- Our favorite vanilla ice cream is Tillamook Old Fashioned Vanilla.
