Peppermint Marshmallow Fudge

Creamy chocolate peppermint fudge topped with mini-marshmallows and crushed peppermint candy.

Ingredients

  • 1 ½ cups granulated sugar
  • cup evaporated milk
  • 2 tablespoons butter
  • ¼ teaspoon salt
  • 3 ½ cups miniature marshmallows divided
  • 1 ½ cups semi-sweet or bittersweet chocolate chips
  • ¼ teaspoon to ½ peppermint extract depending on how much peppermint flavor you want
  • 3 tablespoons crushed candy canes or peppermint candies

Instructions

  • Line an 8-inch square baking pan with foil and spray it with non-stick spray.
  • Combine sugar, milk, butter, and salt in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Continue stirring, and boil for 4-5 minutes.
  • Remove from the heat and stir in 2 cups marshmallows, chocolate chips, and peppermint extract. Stir vigorously until marshmallows and chocolate chips are melted. Quickly pour into prepared pan (work quickly, the fudge will start to firm up). Sprinkle the remaining 1 ½ cups marshmallows onto the top of the fudge, and then sprinkle the crushed peppermint candy on top of that. Lightly press the marshmallows onto the fudge to help them stick.
  • Refrigerate for several hours, or until firm. Cut and serve.
