Brown the meat

Heat oil in a Dutch oven. Add stew meat, salt, and pepper and cook until browned on all sides. 

Add onions

Sauté the onions with the beef for several minutes. 

Add seasonings and liquid

Stir until combined, then simmer for about 2 hours (until the beef is very tender).

Add vegetables

Once the beef is tender, stir in potatoes, celery, carrots, and butternut squash (optional). Cook until the vegetables are tender, about 30 more minutes.

Finishing touches

- Taste for flavoring and make adjustments. - Thicken (if desired).  - Serve with crusty bread for dipping.
