Ingredients

  • 8 oz cream cheese (see note) softened
  • 3 tablespoons mayonnaise or sour cream
  • 1 1/2 cups grated monterey jack cheese divided
  • 14 oz can artichoke hearts drained and chopped
  • 1 clove garlic finely minced
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated parmesan cheese
  • Tortilla chips, baguette, pita chips, veggies for dipping

Instructions

  • Preheat oven to 350°F. 
  • In a large bowl combine cream cheese, mayo/sour cream, 1 cup monterey jack, artichokes, garlic, dill, salt and pepper. Stir until well combined.
  • Transfer to a greased casserole dish and sprinkle the remaining 1/2 cup monterey jack and parmesan over the top. Bake for 15-20 minutes, until bubbly and heated through. Serve immediately with chips, bread or veggies.

Notes

This recipe makes a fairly chunky artichoke dip. If you'd like it thinner you can add two more ounces of cream cheese.
