Instructions
Heat the olive oil in a large saucepan or high-sided skillet over medium heat. Add the onions and cook, stirring occasionally, until the onions have softened and browned (about 7-10 minutes).
Push the onions to one side of the saucepan, then add the meat to other side. Sprinkle the meat with salt, pepper and garlic. Cook, until the meat is browned and cooked through, breaking it up a wooden spoon as it's cooking. Stir the meat and onions together. If there is an excessive amount of grease (more than a tablespoon), drain it off.
Add ketchup, worcestershire sauce, mustard, brown sugar, tomato paste and beef broth, stir to combine. Scrape the bottom of the pan with a wooden spoon to remove any browned bits. Allow the mixture to simmer for about 10 minutes. The sauce should thicken and cook down. Taste and add more salt and pepper, if desired.
Turn off the heat. Place 3-4 slices of cheese on top of the meat and place a lid over the pan. Allow the residual heat to melt the cheese, this happens within a couple minutes. Scoop the cheesy meat onto buns and top with additional cheese (if desired), and your favorite burger toppings.
