Easy Baked Peaches

Peaches are the star of this light, fresh, and easy recipe! Sliced peaches are flavored with maple syrup, cinnamon, vanilla, and butter and baked until until tender and juicy. Serve these baked peaches on their own or as a topping for pancakes, yogurt, oatmeal, cheesecake, pound cake, ice cream and more!

Ingredients

  • 4 medium-large fresh peaches ripe but slightly firm
  • 1 tablespoon salted butter
  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon
  • ¾ teaspoon vanilla bean paste or ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Slice your peaches (not too thin) and place them in a baking dish. I used a 9.5-inch round baking dish. An 8x8 or 9x9 will also work.
  • Combine melted butter, syrup, cinnamon, and vanilla. Pour over the peaches and stir gently to combine.
  • Bake for 20-30 minutes, until the juices are bubbling and the peaches have softened but are still holding their shape. Cool at room temperature for about 15 minutes, this allows the juices to thicken a bit. Serve warm.

Notes

Serving Suggestions:

Breakfast: Spoon over oatmeal, yogurt, pancakes, waffles, or French Toast.
Dessert: Serve with vanilla and ice cream and crushed Biscoff cookies (pictured). Spoon over cheesecake, pound cake, or angel food cake.

Storage:

Store, tightly covered, in the refrigerator for up to 3 days.
