about 20 leaves
Watermelon puree:

cups

about ½ mini watermelon
Mojitos:

to taste (I used almost all of it. About ⅔ cup )
Optional garnishes: watermelon, limes, mint
Instructions
Prepare simple syrup (allow time to chill):
Combine water, sugar, and mint in a small saucepan. Bring to a boil and boil until sugar is dissolved. Remove from heat and chill.
Watermelon puree:
Place watermelon cubes in a blender or food processor and process until smooth. Pour through a fine mesh sieve to remove any solids. Chill the puree.
Assembly:
Combine rum, lime juice, 1 ½ - 2 cups watermelon puree, and mint simple syrup in a large pitcher. Pour into ice-filled glasses, garnish if desired.
Notes
I like to set aside additional watermelon, lime slices, and fresh mint for garnishing each cocktail.
