An easy blended coconut limeade. Slushy, sweet, and refreshing!
Although Memorial Day weekend is the unofficial start to summer, here in Arizona, it already feels like summer. The temps have been in the 90’s and it has become necessary to have a cold drink to sip on if you’re outside for more than a few minutes. We’re planning on grilling this weekend, and I can’t wait to have one of these frosty coconut limeades in my hand to keep me cool while out in sun.
This drink tastes like summer in a glass. Between the sweet coconut, tart lime, and the slushy consistency, it will have you feeling like you should be sitting on a beach somewhere. And if there are no beach visits in your immediate future, at least this frosty drink will keep you cool during the warmer months.
This recipe couldn’t be simpler. It’s only one step and three ingredients. I made this as a mocktail because I’m currently pregnant, but I know that it would be fantastic with a heavy splash of alcohol added before blending (coconut rum, maybe?!). Play around with it and adapt it to your tastes. Cheers to summer!

Frozen Coconut Limeade
Ingredients
- 1 ½ cups sweetened coconut milk, see note
- 1 ½ cups prepared limeade
- 4-5 cups ice cubes, see note
- Juice of 3 limes
Instructions
- Place all ingredients in a blender and puree until smooth. Serve immediately.

The recipe calls for prepared limeade, but you don’t say how to prepare it or if you buy it. If you make it, do you just make lemonade using limes instead of lemons?
