Peanut Butter Cup Magic Cookie Bars

Peanut Butter Cup Magic Cookie Bars – These gooey and addicting bars are a peanut butter lovers dream! Check out all SIX layers of chocolate and peanut butter! These are the best Magic Cookie Bars you will ever sink your teeth into.

Freshly Baked Magic Cookie Bars in Pan

If you’ve been around these parts for a while you know I’m peanut butter obsessed. Cupcakes, fudge, rice krispies treats, brownies, trifles, cookies… I just can’t get enough.

Today I’m bringing you a twist on Magic Cookie Bars. I’ve got 6 layers of deliciousness going on in here, and you are going to LOVE every bite!

Drizzling Sweetened Condensed Milk on Magic Cookie Bars

Last month I was wondering what do with ALL our leftover Halloween candy and I came up with the idea for these Peanut Butter Cup Magic Cookie Bars. I dug through my kids’ candy stashes for peanut butter cups and I got to work.

Here’s what I came up with…

Peanut Butter Cup Magic Cookie Bars

  • Chewy peanut butter cookie crust
  • Chocolate chips
  • Peanut butter chips
  • Peanut butter cups
  • Salted peanuts
  • Sweetened condensed milk

As you can see, I crammed as much chocolate and peanut butter as possible into these Magic Cookie Bars.

Over the top? You betcha.

But, so, so, so incredibly good.

This recipe makes a big pan of bars, which is perfect for sharing this holiday season.

They also freeze beautifully, which means two things:

  1.  You can make these ahead if you need to get a head start on holiday baking.
  2. You can leave a couple bars in your freezer for when you need a little pick me up. We’ll call this “self care”. 😉

Peanut Butter Cup Magic Cookie Bars

 Peanut butter cookie crust, chocolate chips, peanut butter chips, peanut butters cups and salted peanuts make up these gooey, addicting bars.

Ingredients

Peanut Butter Cookie Base:

  • ½ cup unsalted butter, cut into cubes
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 cup all purpose flour
  • pinch salt

Toppings:

  • 1 cup semisweet or bittersweet chocolate chips
  • ¾ cup peanut butter chips
  • 1 cup chopped peanut butter cups
  • ½ cup chopped salted peanuts, make sure they're salted
  • ¾ cup sweetened condensed milk

Instructions

  • Preheat oven to 350°F. Line a 9x13 baking dish with foil (for easy removal), and grease the foil.
  • Place the butter and peanut butter in a large bowl and microwave until melted. Whisk in granulated and brown sugars. Add egg and egg yolk, whisking until combined. Add flour and a pinch of salt and stir with a spoon or rubber spatula until combined. Pour the batter into the prepared pan and smooth the top. Bake for 10 minutes.
  • Remove the pan from the oven (the batter will be barely set but not cooked through).  Immediately top with most of the chocolate chips, peanut butter chips, peanut butter cups and peanuts (reserving a couple tablespoons of each). Pour the sweetened condensed milk evenly over the top. Sprinkle over the reserved chips, peanut butter cups and peanuts. Bake for 20-25 minutes. Allow to cool completely before cutting.

      Hi, Kristine. I think that would be ok (although I haven’t tried it). If you take the crust of a typical Magic Cookie Bar recipe and add my toppings it should work.     I doubled this recipe and baked it in a jelly roll pan for about 18-20 minutes. It was a huge hit!
